Born and raised in Naples, Chef Pasquale Rufino brings the soul of Italian cuisine to Novecento with a refined, international perspective. His career began at just 14 years old and has since taken him through Michelin-starred kitchens and leading hospitality groups across Italy, the UK and Dubai.
As Executive Chef at Novecento Dubai, he leads the restaurant’s culinary vision with a focus on seasonality, authenticity and classic Italian flavours. His approach is hands-on and people-focused, bringing together craft, mentorship and warm Italian hospitality.

With over twelve years of experience spanning Michelin-starred kitchens, prestigious private members' clubs, and international hospitality groups across London, Dubai, Saudi Arabia, and Doha, Maciej has built his career at the highest levels of the industry, working closely with globally celebrated chefs and hosting royalty and VIP guests at some of the world's most exclusive venues.
Blending operational expertise with a passion for hospitality, he has guided Novecento's transformation into the Italian heart of the community, where authenticity, connection, and memorable guest experiences come together.
